Cake:
1 box yellow cake mix
1 box 3 oz. orange jello (reg)
1 tsp. orange extract
1 cup orange juice
1/2 c. veg. oil
1 tsp. orange zest
4 eggs
1 cup semi sweet mini chocolate chips.
Grease and flour a Bundt pan. Put cake mix and jello in bowl. Add o.j., orange extract, veg oil & zest. Add eggs one at a time mixing after each. Beat 2 minutes on medium speed. Fold in mini chips by hand. Pour into pan. Bake 350 degrees 45-55 minutes. Cook on rack 20-25 min. Remove cake to rack and cool completely.
Orange Frosting.
2 Tbls. Chilled butter (1/4 stick, 1/8 c)
1 cup. semi sweet chips. (6 oz.)
1 tsp. orange extract
2 Tbls. orange juice
Melt butter in microwave. Add chips heat on high 60 seconds. Stir. Add extract and stir. Add o.j. Tbls by Tbls. Pour over ridge of cake and cool 20 minutes.
This cake was served at our family's 4th of July BBQ. It was a HUGE hit. So many of my family has asked for the recipe...but Sue had been in Hawaii for so long that I had forgotten all about it. Luckily Sue remembered. So enjoy.
I have looked all over the internet for a picture that resembles this delicious cake...but I can't find one. Just imagine a moist orange colored cake covered in a thin chocolate frosting. It's really great!
